Roasted Squash & Brussel Sprouts

Ingredients:

1-2 winter squash (try butternut or delicata) around 2 pounds cubed into bite size pieces

1 pound brussel sprouts cut in half

Balsamic Dressing:

3 Tbsp balsamic vinegar

2 tsp brown or spicy mustard

1 tsp maple syrup

1 tsp tamari

1 clove of garlic minced

1 Tbsp water

Directions:

Place the squash and brussel sprouts in a bowl and add the dressing to coat the vegetables. Place the vegetables on a roasting sheet and roast the vegetables at 375 degrees for 40 minutes, stirring occasionally to prevent burning.

Notes:

Any winter squash would be wonderful in this dish. Delicata and butternut squash have sweet flavors that combine well with this balsamic dressing. You can add a whole grain to the dish to create a complete meal or use it as is for a side dish. This can also be added to a kale base for a salad.
